Chicken goujons can be made easily at home by substituting the breadcrumbs for Organic Polenta (dried ground maize). Dip your chicken pieces in egg and then coat in the polenta, fry or bake with a drizzle of vegetable oil of your choice. These are a yummy home cooked Gluten free alternative.
These goujons make an easy tea to prepare, especially if you have just come in from work and you need a quick meal for the kids. You could try making a larger batch and putting some in the freezer so yoy always have an easy gluten free home cooked meal available. As an alternative you could try the Orgran range of crumbs that are a great store cupboard line. The Orgran All Purpose Rice Crumbs is a quality product ideal for use in all crumbing applications of meats, fish or vegetables. It is also versitile in sausages, added to sausage meats, or as a stuffing base to which you may add your own herbs. Also ideal as a thickener in soups and casseroles.
We stock a variety of Organic Polentas at Naturally Good Food, and once you have some in the cupboard then it makes a very easy part of a meal. To prepare Polenta on its own Bring 1 litre of water to the boil. Add 250g Organic Polenta and simmer for 5 minutes. Remove from heat. Cover with a lid and leave to stand for 10 minutes.
