Apricot Crumble Squares

An easy to make crumble for all year round Apricot taste, the soft dried Crazy jack Apricots give this recipe its unique taste.
Ingredients
- 300g Self-raising whole wheat flour
- 100g Crazy Jack Porridge Oats - we also sell Organic Porridge oats in large quantities, or you could try Jumbo Oats for extra texture.
- ½ tsp Crazy Jack Cinnamon
- ½ tsp baking powder
- 175g golden organic caster sugar
- 200g butter or soft margarine
- 1 egg beaten
- 2tbsp milk
- 400g Crazy Jack Soft Dried Apricots - these ready to eat soft dried organic Apricots are unlike any other dried Apricot you have ever tasted.
- Finely grated zest of 1 orange
Method
- Preheat the over to 180oC, gas mark 4; grease and line a tin 22cm x 22cm
- Place flour, oats, cinnamon, baking powder and sugar into a large bowl. Rub the butter into the mixture until it resembles breadcrumbs.
- Remove half of the mixture and set aside.
- Add the egg and milk to the other half and spread in the tin.
- Chop the apricots very finely (in a food processor is best) and add the orange zest
- Spread over the base mixture and top with the crumble mixture
- Bake for 35 mins until golden.
- Cool before serving
