Using those surplus tomatoes in gluten free cooking

With a glut of tomatoes it is always a good idea to think of preparing a few meals with them and freezing them away for another occasion. I normally make a large batch of tomato sauce to start with, this normally consists of some onion, garlic and if I have one a stick of celery perhaps some basil and may be a small chill depending on what I have in mind for the sauce.
One I have made the tomato sauce I then turn to the pasta. The combination of fresh tomato sauce and good gluten free pasta can makes some great meal ideas, including :
- Gluten free pasta bake – the Orgran gluten free Lasagnette is just perfect for pasta bake as the small Lasagne pieces are just the right shape to normal the sauce. Additionally, the Lasagnette is part of the Orgran Essential fibre range so you can get some extra fibre in your diet. Although the Lasagnette is gluten free it is so good you can use it like normal pasta. Recently, I tried a topping of a mixture of Orgran rice crumbs, a finely chopped onion and grated cheese this worked really well and added an extra dimension.
- Gluten free lasagne – having a gluten free lasagne in the freezer is not difficult, you just need the basic sauce and a good lasagne, for me the choice is the Orgran Lasagne. If you want to make a vegetarian lasagne or reduce the amount of meat you use then try adding some organic lentils, these work really well and can significantly reduce the cost of making your lasagne. Pulses are also a very good source of protein.
Thinking ahead can make gluten free cooking a little easier, also making the right ingredient choices so that there is no compromise between taste, flavour and goodness.
