Unfiltered, unprocessed and unbleached, the sugar (known as Gula Java) makes a great alternative sweetener for drinks and in cooking.
Coconut palm sugar has a low melting point and a high burn temperature, making it suitable for everyday cooking needs. It's low GI, with a glycaemic value of 35, and is rich in minerals and B vitamins.
