This seaweed is mostly used as a setting or thickening agent where it is ideal for vegans and vegetarians, as it can replace gelatine. The flavour when it is added to dishes is barely detectable. Use to thicken gravies, stews, soups and sauces, or to set liquids for desserts such as jellies, puddings and pannacotta. You can also boil it up and add honey, lemon and spices for a tea (supposed to repel colds and alleviate hangovers)!
