Despite its name, buckwheat is not related to wheat as it is not a grass. Buckwheat is actually related to sorrel, knotweed and rhubarb. It is cultivated for its grain-like seeds and is used as a wheat substitute.
It's naturally gluten free and can be used in a number of different ways.
It's often made into flour to make an assortment of gluten-free products and it's widely used in the raw food world for making raw granola's, cakes, dehydrated crackers, breads and pizza bases.
It's a great binder when soaked as it turns very gelatinous.
Buckwheat flour is the main ingredient in Japanese Soba Noodles.
