The carnaroli rice grain is known as the 'king of risotto': it has the highest amylose content of any rice grain, making it particularly compact and good at absorbing flavours and liquid. It maintains its hard texture as it is cooked and stirred, but still gives that lovely creamy liquid required for risotto as it cooks.

All of the Organico rice range is grown and packed in Bianze, in the century-old rice-fields of the Northern Po valley. The rice is husked by a stone-mill, which gently preserves its nutritional qualities.
