Haricot beans are small, oval, plump and creamy-white with a mild flavour and smooth, buttery texture. They have little flavour of their own, they absorb other aromas and flavours easily, this overall blandness makes them a useful bean to use in bean salads, vegetable soups, and slow-cooked dishes such as cassoulet or bean pures.
If you come from the US, you will know them as navy beans and are the classic ingredient in Boston baked beans.
In addition to their popularity in the US Haricot/Navy beans are widely used in France, Spain, Portugal and South America.
As with all beans Haricot beans are low in saturated fats and sodium, the health benefits of haricot beans are reducing intestinal problems, lowering cholesterol and controlling blood pressure.
