Capers are one of those ingredients that perhaps you Mother did not use and so are a bit of a mystery? They are pickled flower buds, sundried then pickled in brine. They have a wonderful pungent slighlty peppery pickle taste, and can add quite a lot of salt to a dish ( you can rinse them first if you prefer)
