These kidney-shaped light-brown organic cashews, from India or Vietnam, are sweet, buttery and crunchy. Truly delicious.
Theyre a really unusual nut (strictly speaking a seed), as they grow outside of the main fruit of the tree and theyre also extremely hard to extract from their shells. The process usually requires heat, and the outer casing can have a very caustic substance extracted from it which can be used in resin by the chemical industry. Better processing methods now mean there are less of the cheaper brocken cashews (cashew pieces) available than previously.
These cashews are unsalted and unroasted and have no added oil. They dont need it! Theyre great as a snack on their own, but also useful in baking, desserts, salads and curries. Theyre a good source of vitamin B, magnesium, copper and protein and are high in unsaturated fats.
