Over 6,000 years ago, quinoa was cultivated and eaten by pre-Incan cultures, who considered it magical because of its high nutritional value (calling it 'Chisiya mama', or mother grain). Today, quinoa is recognised as a complete protein: it contains all seven essential amino acids, and is also rich in phosphorus, magnesium, calcium and iron. Its ideal for vegetarians and vegans, as it fully replaces the nutrients found in meat and fish. To cook quinoa, add one part quinoa to two parts water or stock, bring to the boil, then cover and simmer until tender (about 15 mins). Once cooked, a tiny white spiral appears, encircling the grain.
