Kasha is buckwheat that has been roasted. Despite its name, buckwheat is not related to wheat as it is not a grass. Buckwheat is actually related to sorrel, knotweed and rhubarb. It is cultivated for its grain-like seeds and is used as a wheat substitute.
Kasha is naturally gluten free and can be cooked as though it were a grain. Be careful not to overcook it or it will lose its texture. Cook al dente to keep it light and fluffy.
