Quinoa is very, very good for you. It's a 'complete protein', with all seven essential amino acids, and rich in phosphorus, magnesium, calcium and iron. It's fantastic for vegetarians and vegans, as it really does replace the nutrients of meat and fish (something hardly any other plant does).
It's easy to cook too; You just tip it into boiling water as you would rice. It cooks in about 15 minutes and does so in a really entertaining, fizzing fashion.
It looks good on the plate at the end, particularly if you choose black, red or multicolour quinoa, and separates into distinctive grains, rather than the amorphous mash you can sometimes get with rice.

It goes perfectly with meat, fish, vegetables, pulses and lentils. It tastes great with a sauce or without and when cold is a good basis for a salad dish. You can reheat the cooked grain the next day much more safely than rice.
