Bulgar Wheat comes from Turkey and France and is whole wheat that has been partially cooked, dried and cracked. The advantage of this is that it cooks quite quickly and can be added to many dishes to thicken them and provide texture and flavour, or cooked with stock and served as an alternative to rice, pasta or potatoes.
