Buckwheat (despite its name) is unrelated to wheat, being part of the rhubarb family. It's naturally gluten-free and as flour, is ideal for making pancakes, blinis, noodles and pasta with a nutty tang.

Enzyme activity during sprouting breaks down inhibitors, transforming and multiplying nutrients into their more easily digestible forms. (When making bread you may find you need a little more liquid than with regular buckwheat flour.)
