Spelt is an ancient variety of wheat (triticum spelta) that makes great nutty-flavoured bread, cakes and pancakes. This flour is creamy white in colour and has been sieved to remove the bran, for gourmet baking.

White spelt flour can be used in place of conventional white wheat flour. Spelt flour breads may rise more quickly than breads made with standard wheat.
