Spelt is an ancient variety of wheat (triticum spelta) that makes great nutty-flavoured bread, cakes and pancakes. This flour has been finely sieved to remove some of the bran.

Spelt flour can be used in place of conventional wheat flour in the same quantities. Spelt flour breads may rise more quickly than breads made with standard wheat.
