Pitted Ashlock prunes

A prune is a dried plum: but while all prunes are plums, not all plums can become prunes! To become a prune, a plum needs to have a soft, thin and sweet skin, with the fruit full of natural sugar, to aid preservation.

These prunes do not require soaking before eating or using in cooking. They are pitted by the 'Ashlock method', in which the pit is pushed out by a small bolt, leaving the shape of the fruit almost unchanged.
