These are lovely beans - really you could say there is not a lot of difference between the pulses but somehow these are my favourite. They get their name from the blck dot on the side, where they were attached to the stalk of the bean plant. Best soaked overnight like any dried beans then boiled for around 30 - 40 minutes. The time varies depending on how old the beans are (as they get older they take longer, but they can be stored for years without any detriment) and what you want to use them for as they can be mushed down to make the base for vegetarian burgers or pate, or left a little firmer to keep their shape in a stew or mix.
