Puy lentils, small and blue-ish green in colour, are held in high regard for their nutty, peppery flavour and ability to hold their shape during cooking. With great stocks of iron and vitamin B, they're popular with vegetarians, but also have a strong affinity with meat, due to their rich, earthy taste.
